Ingredients

20 Hard boiled eggs, peeled and diced
6 red ripe tomatoes diced
1 large bell pepper, red or yellow, diced
1 large seedless cucumber, diced
1 pot fresh parsley chopped fine
3 Tbsp heart-healthy oil of choice, we prefer coconut oil
Mrs. Dash
Cajon spice
salt-free boullion
Tips
We like to eat ours with tortilla chips, but it would be equally as yummy in a pita or a whole wheat wrap.
Directions
Dice all ingredients. Add seasonings. Pour up to 3 Tbsp heart-healthy oil over salad. Stir together. Serve on a bed of lettuce.
