6 skinless, boneless chicken thighs
1/2 cup light coconut milk
1 cup corn flakes crushed
2 tbsp sweetened shredded coconut
1 tsp onin powder
1 tsp garlic powder
1 tsp seasoning salt
For a little kick add 1/2 tsp cayenne to corn flakes mixture!
Crush 1 cup of corn flakes or whiz them in your food processor until somewhat med/fine ground.
Place in seperate bowl with shredded coconut, garlic powder, onion powder and seasoning salt.
Beat egg and add to coconut milk and chicken. Coat chicken completely with egg/coconut milk mix.
Take each thigh out and shake off excess milk/egg.
Dip thighs in corn flakes mixture and coat outside with mix.
Lay on baking sheet sprayed with cooking spray.
Cook at 350C for 30 min or until no longer pink. Cook thoroughly!
