Cara's Lettuce Wraps

Introduction

Number of Servings: 4

Ingredients

    19 ounces Chicken Breast Cooked and processed
    3 tsp Canola Oil
    1/3 cup green onion
    1/2 cup chopped red bell pepper
    1/2 cup celery
    1/2 cup chopped carrot
    3 Tbsp cilantro
    1 Tbsp Chopped Jalepeno
    2 cloves of garlic
    1/3 cup water chesnuts
    1/3 cup chopped cashews
    2 Tbsp light soy sauce
    2 Tbsp seasoned rice vinegar
    1/4 tsp sesame oil
    1 1/2 tsp sugar
    1 tsp fish sauce

Tips

For additional flavor, add red pepper flakes.


Directions

Defrost chicken and process/ground.

Cook chicken with 2 tsp oil until close to cooked completetly through in a frying pan on medium heat.

Add all vegetables and cook in 1 tsp additional oil

Mix soy sauce, vinegar, sugar, sesame oil, fish sauce together and add to frying pan. Cook for 5 minutes.

Wrap in lettuce leaves and enjoy.
