Ingredients

3 eggs
1 c. sugar
1/2 c. canola oil
1 tbs almond extract
3 c. flour
1/4 c. cocoa powder
1-1/4 tsp baking powder
1/4 tsp salt
1/2 c. chopped almonds
ICING: Optional
1 1/2 c. powdered sugar
1/4 tsp almond extract
1 tbs of milk

Directions
preheat oven at 350, combine eggs, sugar, oil, extract. beat well with mixer on med. speed. in another bowl combine flour, cocoa, baking powder and salt. add to egg mixture. beat at low speed until combined. mix in almonds. if real sticky add a little flour to shape dough easily.
Shape doug into 2 (12in x 2in) logs, place on 2 cookie sheets. bake 30 minutes, cool slightly, slice diagonally inot 3/4 inch thick slices. reduce over to 200 degrees, stand biscotti on edge on baking sheets and return to oven for another 30 minutes or until dry.
