Healthy Beef Stew with Veggies

Introduction

Ingredients

    Bacon, 3 medium slices, cooked (raw product (remove)
    Olive Oil, 1 1tsp (remove)

    Celery, raw, 2 cup, diced (remove)
    Garlic, 6 cloves (remove)
    *Peppers, sweet, red, fresh, 1 cup, chopped (remove)
    Cilantro, raw, 5 tbsp (remove)
    *Cumin seed, 1 tbsp (remove)
    Onions, raw, 1.5 large (remove)
    Carrots, raw, 1.5 cup, strips or slices (remove)

    Beef, top sirloin, 6 oz (remove)
    Garlic powder, 2 tbsp (remove)
    *Ground tumeric, 1 tbsp (remove)
    Paprika, .5 tbsp (remove)

    Beef bouillon, 2 cube (6 fl oz prepared) (remove)
    Water, tap, 6 cup (8 fl oz) (remove)

Directions

Saute bacon in olive oil, once browned add veggies & cumin seed. Stir and saute on med-high until onions are just translucent.

Meanwhile, mix thinly sliced beef and powered spices. Let sit until room temperature.

Add beef to veggie mix and sear on both sides. Add water, bouillon, fresh cracked pepper to taste.

Simmer on low for at least an hour or until beef is completely tender. Adjust seasonings to taste.

Serve over lentils or rice (not included in calorie count).
