Ingredients

3-1/2 Cups (2- 14.5oz cans) fat free chicken broth
1 (14.75oz) can cream style corn
3 cups frozen sweet corn
2 plum tomatoes chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
1/2 cup coconut milk/beverage
3 garlic cloves, chopped
1/4 tsp ground cumin
3/4 cup instant mashed potato flakes
1/4 cup nonfat yogurt
Tips
Directions
Place all ingredients except potato flakes, sour cream, and optional ingredients in the crockpot. Mix well.
Cover and cook on high 3-4 hours or on low 7-8 hours.
Add potato flakes and yogurt. Stir thoroughly. If you like, season to taste with salt and black pepper and sprinkle with cilantro
