Introduction

Great way to get your veggies in, fill you up, and count dinner as done! Best part about it is you can use ANY veggies you have on hand. Great way to get your veggies in, fill you up, and count dinner as done! Best part about it is you can use ANY veggies you have on hand.
Number of Servings: 2

Ingredients

    1 medium Zucchini, sliced
    2 C chopped Cabbage
    1 C chopped bok choy
    1 C chopped carrots
    1 C chopped celery
    1 C sliced red peppers
    1/2 medium onion, diced
    1 Tbsp olive oil
    1 Tbsp soy sauce

Directions

Chop all veggies. Heat oil in large wok or non-stick pan. When oil is heated, add onions and saute until transluscent and fragrant. Add cabbage, carrots, celery, and bok choy. Saute until vegetables start to soften to your preference. Add red peppers and zucchini and saute until to desired consistency.

Serving Size: Makes 2 hearty servings
