1/4 cup olive oil 7 cloves garlic, pressed 1 (16 oz) pkg frozen broccoli 1 1/2 cups egg substitute 1 1/2 c couscous, dry 1 1/2 c water 1 c grated parmesan cheese
Combine couscous and water, microwave for 5 min. Fluff with fork. Set aside. Cook egg substitute in a skillet (like scrambled eggs). Set aside. Add olive oil to a large skillet or dutch oven. Heat over med-low heat. Add garlic and cook until browned. Add frozen broccoli and cook until tender. Add couscous and eggs. Mix well. Remove from heat and add parmesan cheese.
