Very filling soup for lunch or as a first course at dinner Very filling soup for lunch or as a first course at dinner
Number of Servings: 6


    1 T olive oil
    1 small onion chopped very fine
    1 clove garlic crushed
    1 can low sodium low fat chicken broth
    1 can small red beans
    1 large can crushed tomatoes
    1 t basil (optional)
    Pepper to taste


Saute onion and garlic in olive oil in large sauce pan. Rinse beans in colander and blend with can of broth until smooth. Add to pot along with tomatoes. Add seasonings and cook until 10 minutes until flavors are blended.

Serving Size: Makes 6 1 cup servings
