Ingredients

    *Chicken-Perdue Boneless Skinless Chicken Breast, 4oz
    *Extra Light Olive Oil, .5 tbsp
    Lime Juice, 1 T
    *Cooking Spray, Pam Cooking Spray
    *BLACK BEANS , GOYA, LOW SODIUM 0.33 cup
    Mangos, .33 cup, diced
    Yellow Sweet Corn, Canned, .25 cup
    Onions, raw, 2 tbsp chopped
    Lime Juice, .5 T
    Pepper, black, .5 tsp
    Chili powder, .5 tsp

Directions

In a bowl, coat 4 oz pounded boneless, skinless chicken breast with .5 t extra-virgin olive oil, .5 t chili powder, and 1/2 tbsp fresh lime juice; season with freshly ground black pepper. Coat a medium skillet with cooking spray; cook chicken over medium-high heat, turning once, until golden brown and cooked through, about 4 minutes on each side. In another bowl, combine 1/3 cup rinsed and drained low-sodium black beans, 1/3 cup diced mango, 1/4 cup corn, 2 tbsp chopped sweet white onion, 1/2 tbsp fresh lime juice; season with freshly ground black pepper and salt (but salt is not in the ingredients list or nutritional value as the sodium is too high with it so I leave it out when I make this dish). Serve chicken with black bean and mango salad.
