Fantastic Veggie-Packed Frittata (Crustless Quiche)

This is a fantastic recipe for weekend brunch, weekday breakfast or lunch or a post workout, protein packed snack!

This is a fantastic recipe for weekend brunch, weekday breakfast or lunch or a post workout, protein packed snack!

Number of Servings: 4

Ingredients

    Peanut Oil, 1 tbsp
    Onion 1 medium (2-1/2" dia) (finely chopped)
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (diced, approx 1/4" )
    Zucchini, baby, 2 medium (diced)
    Mushrooms, fresh, 1.5 cup, pieces or slices
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) (diced)
    Egg, fresh, 10 large (beaten)

Tips

You could add some grated cheese to the top of this recipe for an added kick. I suggest an OLD Cheddar or Parmesan...something with a sharpness.


Directions

1. In a 12" frypan or skillet, heat oil and sautee onions, peppers and zucchinin until tender.

2. Add mushrooms and continue sauteeing until mushrooms sweat.

3. Beat eggs and continue cooking on stovetop for 2-3 minutes.

4. Carefully add tomatoes to the mixture (this is to prevent the tomatoes from turning to mush).

5. Remove from heat and place in oven to bake at 425 for additional 7-10 minutes...or until fritatta springs back up when pressed with a finger in center.

Divide into 4 servings and enjoy immediately!

Serving Size: Makes 4 LARGE servings (4 wedges)
