Tofu Egg Scramble

Introduction

Great for transitionaing from eggs to tofu! No one believes this is Tofu added to Egg!!! Great for transitionaing from eggs to tofu! No one believes this is Tofu added to Egg!!!
Number of Servings: 2

Ingredients

    About half the block of Tofu
    About 3/4 cup Onions (I use green, white, yello, red, or what even fresh I have on hand)
    about 1 tsp Pepper
    about 1/2-1 tsp salt
    About 2-5 Fresh leves Basil
    About 1 tbs Coconut Oil or any that is a High Heat Oil

Tips

Can varry spices and even omit egg compleatly! Try doubling Tofu and keeping 1 sm egg.


Directions

Sautee Coarsly Diced Onions, Salt, Pepper, and finely chopped Basil in Coconut Oil on Medium to Med/high Heat for about 3-4 min.
crumble up Drained Tofu on top mixture. Scrable egg and add over it stirrining well!
Can be dressed up with Vegan Cheese and served w/or on muffin.
