Spinach Lentil Soup

Number of Servings: 14

Ingredients

    2 cups - diced onion
    3 tbls. - olive oil
    3 tbls. - granulated sugar
    1/3 cup - tomato paste
    10-1/3 cups - water
    2 cups - French lentils
    2-1/3 cups - diced carrots
    2-1/3 cups- diced celery
    2/3 bag (10 oz bag) fresh spinach
    2 - tbls. - tamari
    1 tsp. each - Morton Lite Salt Mixture and black pepper

Directions

Sautee onions in olive oil on low heat until soft. Add sugar and cook 10 more minutes also on low heat. Add tomato paste and stir well. Add water, lentils, carrots and celery and turn up the heat until it comes to a boil. Lower heat and continue cooking at a soft boil until the lentils are tender and the vegetables are cooked. Turn off the heat and stir in the spinach, tamari, salt and pepper. Serve.
