Ingredients

2 Green Peppers
1/4 c. Onion, diced
1/2 lb. Lean Ground Beef
1 c. Stewed Tomatoes
3.5 oz. Sliced Mushrooms, canned
1/2 c. Brown Rice
4 oz. Cheddar Cheese, shredded
Tips
Directions
Cut top off of the Green Peppers; place in bowl with 1/2 cup water. Microwave 2-4 mins.
In small pan, cook onion and ground beef over medium heat, add stewed tomatoes and mushrooms. Bring to boil and add brown rice. Cook approx. 6 minutes, until rice is cooked. Mix in half the shredded cheddar cheese.
Cut green peppers in half lengthwise. Scoop rice mixture into the green peppers. Sprinkle with remaining cheese and bake at 300 for 10-15 mins. just to melt the cheese.
