Number of Servings: 6

Ingredients

    1 lb (1 package) of extra lean ground chicken
    1 cup onion, diced
    1 clove of garlic, diced
    1 can low sodium tomato soup
    1 1/3 cups water
    2/3 cup instant rice, uncooked
    1 can kidney beans, rinsed and drained
    1 cup diced fresh tomato (one large, or 2 small)
    4 cups shredded cabbage
    1/4 tsp black pepper
    salt to taste

Directions

Brown meat, drain.
Return to pan and add garlic, onions, and uncooked rice.
Saute 1 minutes, then add beans, soup, water, tomatoes, and peper.
In a casserole dish sprayed with non-stick spray, layer cabbage on bottom.
Top with meat mixture, do not stir.
Bake covered at 325 for 1 hour and 20 minutes.

Can substitute chicken for beef, turkey, or veggie ground round.

Makes 6 servings
