Curried Sweet Potato and Lentil Stew

Ingredients

    Sweet potato, 3 cup, cubed
    Carrots, raw, 1.5 cup, cubed
    Onions, raw, 0.5 cup, chopped
    Lentils, 0.75 cup
    Olive Oil, 1 1tsp
    Frozen green Beans, 1.5 cup
    Curry powder, 1tbs
    Cumin powder, 1ts
    Ginger, 1ts
    Minced garlic,1ts
    Salt and pepper to taste
    1 can (14 1/2oz) vegetable broth or water (I used water)
    plain fat-free yogurt (optional)

Tips

The nutritional information is without rice and yogurt.


Directions

Heat oil in a pot, add the spices, cook about 1 minute. Add the broth/water stir. Add potatoes, carrots, and lentil. Bring to boil, lower heat to simmir for about 45 to 5o minutes until the vegetables and lentil are cooked. Add the beans. cook another 10 minutes. Adjust seasoning.
Serve with brown rice and a dalop of plain yogurt (optional)
