Quick and Easy Chicken Provencal

Introduction

This great dish serves up in 20 minutes. The vegetables are braised right in the pasta water in the last few minutes of cooking the pasta. The original recipe called for 3 Tablespoons of pitted olives but I've left them out, Without them the recipe tastes fresher and you save on a little fat. Add a salad and you have a whole meal. Ingredients

    1 14 oz can tomatoes
    1 T fresh Basil
    4 cloves garlic
    1 egg white beaten with 1 tsp water
    1/3 cp fresh bread crumbs
    3 Tbl minced parsley
    4 chicken breast
    2 t oil
    4 oz linguine. uncooked
    1 large carrot julienned
    2 cups fresh spinach. chopped coarsly
    20 sprays of Safeway Brand Butterlicious spray
    Grated Parmesan cheese

Directions

Combine tomatoes, basil and garlic in sauce pan. Mix bread crumbs with parsley and pepper. Dip chicken in egg and then in bread crumbs and sauté until golden. Remove to baking pan and bake until fully cooked. Prepare spaghetti and add spinach and carrots during last 3 minute of cooking. Drain and toss in butter. Serve chicken with pasta. and grated parmesan cheese.

Serving Size: Makes 4 servings including 1/2 cup of pasta and one chicken breast
