2 tbsp Extra Virgin Olive Oil
1 Onion, med. sliced
1 cup Red Ripe Tomatoes
1 clove Garlic
50 gram Prawns (shrimp)
50 gram Scallops
1/2 cup Peas, frozen
50 gram Mussels (flesh)
3/4 cup White Rice, medium grain
1.5 cup Chicken unsalted stock
1/2 tsp saffron threads
1.5 cup water
serve with a leafy salad. Saffron thread can be dissolved in hot water for 5 minutes before adding.
Add onion, cook 5 minutes, then add tomato and garlic cook further 3 minutes or until softened.
Add rice, stir to coat grains evenly.
In a saucepan, heat stock until hot, then add to frying pan.
Add saffron and stir to combine.
Bring to the boil, then reduce heat to simmer for 20 minutes.
Add seafood, mix in well with rice, cook a further 8 - 10 minutes, adding peas in the final 5 minutes. Sprinkle with parsley
