Chicken fajita stew

Introduction

Number of Servings: 8

Ingredients

    8 thawed boneless, skinless chicken thighs-any extra fat removed, cut into small strips

    1 red bell pepper and one green bell pepper, chopped
    1 large white onion, chopped
    1/2 tsp smoked paprika
    1 tsp chilli powder
    2 tsp Mrs. Dash garlic & herb blend
    1 tsp salt
    1 tsp powdered chicken boullion
    2 tbsp extra virgin olive oil
    1/3 cup all-purpose white flour
    8 ounces sharp cheddar cheese, shredded
    4 cups water



Directions

In a large soup pot, heat olive oil and sautee onions and peppers until it begins to soften a little. Add the chicken and the seasonings, adding more or less to taste-including the boullion. Add 4 cups of water and bring everything to a boil. In a bowl, combine 1/3 cup flour and 1 cup water and beat with a fork until it looks like milk. Add to the mixture, and stir. Add the cheese and reduce heat to simmer until desired consistency.

Serving Size: makes 8 1 cup servings
