CHICKEN SALAD (SINGLE SERVING)

Ingredients

    4 OZ. COOKED CHICKEN (DICED)
    1 tbl. mayonaise
    1/4 c. diced celery
    1/4 c. diced red onions or green onions
    1 tsp. lemon zest
    1 tbl. lemon juice
    1 tsp. or tbl. dill weed (your personal preference)
    salt and pepper to taste
    Mix together and serve on sandwich, as a tomato stuffing or alone with avacado slices (not calculated in the recipe).

Directions

1 single serving. Use one pre-cooked chicken breast (approximately 4 oz). Great for Gastric By Pass patients. Good low-carb high-protein meal.
