1/2 cup carrot
1/2 cup onion
1/4 cup water
2 tablespoons mild curry powder
1 teaspoon chili powder
1/4 cup soaked cashew nuts
1/4 teaspoon turmeric
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1 chopped tomato
1 small onion, finely sliced
1 medium carrot, finely sliced (I used a vegetable peeler to make ribbons)
1 medium red pepper, finely sliced
8 oz. mushrooms, finely sliced
10 oz. bag of baby spinach leaves
Pour sauce over the veggies and mix well. Let the mixture marinate for 10 minutes or so.
Stir again and then serve.
