Sunflower, Molasses, Oatmeal bars

Introduction

Found a similar recipe, but it called for flour and sugar and I don't do either of those, so I thought I would try my hand at removing those ingredients and I thought it came out pretty good. Number of Servings: 24

Ingredients

    1 stick butter
    1/8C coconut oil
    1T cinnamon
    1 1/2t vanilla
    2T molasses
    3/4C coconut palm sugar
    16 dates (chopped small)
    1/2C sunflower seeds (chopped, not fine)
    3/4t baking powder
    2 1/4C oatmeal (not instant)

Tips

This was a great recipe from another site, but I needed to tweak it to suit my needs. You can try different nuts and different sweetners.


Directions

Preheat oven 375 degrees.
Melt butter in stove top pan on med heat, add cinnamon, coconut sugar, vanilla and molasses till well mixed. Sugar will not break down all the way.
Turn off the burner, add sunflower seeds, baking powder, dates and oatmeal.
Transfer the mix to a 9 x 13 greased pan.
Bake for 8-10 minutes, it will bubble up, but that is ok.
Remove from oven and let cook for about 1 hour, cut into bars.

Serving Size: 24--2 inch pieces
