4-6 oz. skinless, boneless tilapia fillets 1 large sweet onion, thinly sliced 3 cloves garlic, minced 1 T capers, drained 1-14.5 oz. can diced tomatoes with Italian spices Salt and pepper 1/4 cup shredded Parmesan cheese
Coat a medium sized baking dish with nonstick cooking spray. Layer onions on bottom of baking dish. Salt and pepper each side of the tilapia and place on onions. Sprinkle the capers and garlic over the fish. Spoon tomatoes over top and bake for 15 minutes at 375°F. Sprinkle each fillet with one tablespoon shredded Parmesan cheese and serve.
Serves: 4 Substitute any light white fish. Adjust cooking time for thicker fillets.
