1 large sweet onion, thinly sliced
3 cloves garlic, minced
1 T capers, drained
1-14.5 oz. can diced tomatoes with Italian spices
Salt and pepper
1/4 cup shredded Parmesan cheese
Substitute any light white fish. Adjust cooking time for thicker fillets.
