4-6 oz. skinless, boneless tilapia fillets
1 large onion, thinly sliced
1-16 oz. can diced tomatoes, drained
4 T. fresh basil or 2 T. dry basil
8 cloves of garlic minced
8 Kalamata olives, halved
1/4 cup fat-free feta cheese, crumbled
Coat a medium sized baking dish with nonstick cooking spray. Layer onions on bottom of baking dish. Salt and pepper each side of the tilapia and place on onions. Sprinkle the olives, basil and garlic over the fish. Spoon tomatoes over top and bake for 15 minutes at 375°F. Sprinkle each fillet with one tablespoon crumbled feta cheese and serve.
Substitute any light white fish. Adjust cooking time for thicker fillets.
