Rice and Lentil Salad

Introduction

I used black rice and red lentils (which can be hard to find and/or expensive) but should be good with brown rice and whatever lentils you have. I used black rice and red lentils (which can be hard to find and/or expensive) but should be good with brown rice and whatever lentils you have.
Number of Servings: 3

Ingredients

    rice, lentils, walnuts, cilantro, seasoned rice vinegar, sesame oil, lime juice, cayenne

Directions

Cook rice and lentils separately; drain if needed.
Cool to room temp; add walnuts, cooked edamame & cilantro.
Whisk dressing ingredients together (cayenne is optional); taste and adjust proportions to taste.
Toss dressing with rice/lentil mixture; chill in refrigerator.
