Stepf's Vegan Tofu Sour Cream

Introduction

This tofu sour cream recipe is quite versatile. Add 2 cloves of minced garlic and cut the lemon juice in half for aioli, a teaspoon of sriracha for a spicy "mayo," or any combination of fresh herbs. Ingredients

    1 pound (16 ounces) firm tofu, drained
    3 lemons, juiced
    1/4 cup olive oil
    1 T white vinegar (white wine, rice, or coconut work well)
    1 teaspoon salt
    pinch black pepper

    Optional add-ins (choose one):
    2 cloves garlic, grated
    1 teaspoon sriracha
    handful chopped rosemary, basil, cilantro or parsley

Directions

Combine all ingredients in a food processor and puree until smooth. Taste and add additional salt and pepper as desired.

If you prefer a thinner sour cream, add a couple of tablespoons of water at a time until the mixture reaches the desired consistency.
