Introduction

Ingredients

    Half a large sweet potato
    1 cup refried black beans
    1 garlic clove
    Half an onion
    2 oz Philadelphia 1/3 less fat cream cheese
    1 tsp cumin
    Salt and pepper to taste

Directions

Microwave Sweet Potato for 8 minutes.
Brown onion and garlic in skillet until soft.
Add black beans and spices and cook for 5 minutes.
Mash together black beans and the cheese until creamy.
Heat tortilla.
Mash sweet potato on top of tortilla.
Add the bean cheese mixture.
Roll and Enjoy!
