Vegan Creamy White Sauce

Introduction

This basic white sauce is incredibly versatile. Use it anyplace you would use a Bechamel in non-vegan cooking, and spice it up in any way you'd like! This basic white sauce is incredibly versatile. Use it anyplace you would use a Bechamel in non-vegan cooking, and spice it up in any way you'd like!
Number of Servings: 8

Ingredients

    2 T olive oil
    2 T whole-wheat flour
    1 cup water
    1 cup unsweetened non-dairy milk
    1 t low-sodium soy sauce
    1/4 t black pepper
    pinch nutmeg

    Optional add-ins (omit nutmeg):
    aromatics (choose any combo--saute until light brown before adding flour): 1/2 onion, 1 stalk celery, 3 garlic cloves

    chopped herbs (choose any combo--add fresh at the end or dried with the flour): rosemary, sage, parsley, basil, tarragon)

    1/4 cup nutritional yeast (for "cheesy" sauce)

    1/4 cup dried mushrooms (add with the flour)


Directions

Place a saucepan over medium heat, add the oil, then add the flour. Whisk constantly as the flour cooks, about three minutes. Add the remaining ingredients (except the nutmeg) and lower the heat. Simmer, whisking often, until the sauce reaches the desired consistency. (Usually this takes about 15 minutes.)
Season with salt if desired.


Serving Size: makes 8 1/4-cup servings
