Introduction
I took out the mushrooms and green pepper and added more broccoli, carrots and celery. I also added 1 Tbsp. of cornstarch to the broth and soy sauce to thicken it a little. Ingredients

1 lb. beef cubes (such as Market Day Beef for Stew)
.5 cup frozen, chopped onion
8 cups broccoli
1.5 cups diced carrots
1 cup diced celery
3 tsp Smart Balance Omega Oil
2 tbsp light soy sauce
1/2 cup low sodium beef broth
1 Tbsp. cornstarch
Tips
Directions
heat skillet at medium-high heat. Add olive oil, beef cubes and cook for 3-4 minutes. Add vegetables and cook for another 3-4 minutes. Add soy sauce, beef broth, cornstarch. Cook for another 5-10 minutes or until sufficiently cooked.
