4 oz bittersweet chocolate (60% or higher) chopped
4 oz maraschino cherries, drained and chopped
3/4 c white sugar
2 whole eggs
6 egg whites
1t vanilla extract
1/2 c pureed cooked beets
1/4 c finely ground flaxseeds
1/2 c whole wheat pastry flour
1/4 c cocoa
1/4 t baking powder
Combine chocolate, sugar, and 1/2 water in a small saucepan and melt over low heat, stirring occasionally. Allow to cool slightly.
In a separate bowl, stir together 2 eggs, 1 egg white, vanilla, pureed beets, cherries and cooled chocolate.
In another bowl, combine flaxseed, flour, cocoa, and baking powder. Blend dry ingred into the egg bowl, stirring just until combined.
Using mixer and wire whisk, whisk the 5 egg whites until stiff. Place 1 heaping T into the cake batter and stir. Slowly fold the rest into the cake batter. Pour into pan, bake until toothpick inserted in middle comes out clean, from 30-40 minutes. Let cool in pan 5 minutes, remove from pan and cut.
Serving Size: Cut cake into 10 pieces
