Deep Dish Cookie Pie

Ingredients

    3 cups garbanzo beans or white beans
    3/4 cup oats
    1/4 cup sweetened applesauce
    3 T. coconut oil
    2 tsp. vanilla extract
    1/2 tsp. baking soda
    2 tsp. baking powder
    1/2 tsp. salt
    1-1/4 cups brown sugar, packed
    1 cup chocolate chips

Directions

Blend beans, applesauce, and oil together until finely blended and no chunks are visible. Grind quick oats to flour in a food processor. Combine bean mixture, oat flour, and the remaining ingredients together until well mixed. Pour into a greased 10-inch springform pan. Cook at 350 degrees for 35-40 minutes. Let cool before removing from pan.
