1/2 cup white flour
1/2 cup whole wheat flour
1/3 cup rolled oats
1/3 cup Splenda
1/4 cup Splenda brown sugar blend
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
4 Tbsp Land o Lakes light butter with canola oil
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup unsweetened applejuice
1 tsp vanilla extract
1/4 cup eggbeaters
2 large braeburn apples (about 1 lb), chopped
2. Combine the flours, oats, sugars, cinnamon, nutmeg and salt in a bowl. Cut in the butter until the mixture looks like coarse meal. Set aside 1/2 cup.
3. Combine the remaining flour with the baking powder, baking soda, apple juice, vanilla, and egg substitute. Beat at a medium speed with an electric mixture until blended. Fold in the apples.
4. Spoon the mixture into an 8X8 inch baking dish sprayed with cooking spray. Sprinkle with the reserved flour mixture.
5. Bake for 30-35 minutes until the cake springs back in the center when lightly touched. Cool the cake until warm.
