Ingredients

    *basmati brown rice (uncooked), 1.5 cup (remove)
    *Muir Glen Fire Roasted Tomatoes with Green Chili, 1.5 cup (remove)
    Beans, black, 1.5 cup (remove)
    Spinach, frozen, 1 package (10 oz) yields (remove)
    cumin, to taste
    cayenne, to taste
    salt and pepper, to taste

Directions

combine rice, tomatoes (drained), black beans (drained and rinsed), spinach (thawed and squeezed dry) and seasonings. add 2 and 1/3 cup boiling water. cover in double layer of foil and bake at 375 for one hour.
