Introduction

Number of Servings: 24

Ingredients

    3 lbs beef (lean or extra lean)
    24 cups of tomatoes, seeded and chopped. Reserve 6 cups
    3 onions chopped
    3 jalapeno peppers chopped
    8 cloves garlic chopped (more if you like)
    1/2 cup olive oil
    Seasonings (this is going to vary depending on your tastes)
    3 tbls salt
    2 tbls pepper
    6-10 tbls chilli powder
    2 tbls cumin powder
    1tbls onion powder
    1 tbls garlic powder
    ** Optional
    jalapeno powder
    ancho chilli powder
    green chilli powder
    red chilli flakes

Directions

Sautee the onions, peppers, and garlic in the olive oil. Add in seasonings. Cook until translucent. Add in the beef. Cook until browned all the way. You can do this in stages if your pot is not big enough. Add in chopped tomatoes and stir. Let simmer for 3 hours. Take the reserved chopped tomatoes and puree them in a food processor or blender. Add to the pot. Continue letting the chilli boil/simmer for another 4-5 hours. Enjoy!
