Crockpot Eggplant Suprise

Ingredients

    1 Large Eggplant
    2 6 oz cans of tomato paste
    1 can Kidney Beans
    3 oz Parmesan Cheese - Grated

Directions

Cut up eggplant into 1" pieces and put into crockpot. Add the tomato paste and kidney beans to crockpot and stir until thoroughly mixed. Sprinkle parmesean cheese on top of the mixture. Cook in crockpot on high 3-4 hours or low on 6-8.
