Healthy Lasagna

Ingredients

    6 -Ronzoni Healthy Harvest Whole Wheat Blend Pasta - Lasagna noodles
    4 oz - HoneySuckle White 93/7 Lean Ground Turkey
    1/2 cup - Bob's Red Mill TVP
    15 oz - Precious Low Fat Ricotta Cheese
    2 cups - Great Value Feather Shredded pat-skim Mozzarella Cheese
    1/4 cup - Better 'n' Eggs egg substitute
    28oz can - Great Value Whole Tomatoes in Tomato Juice
    14.5 oz can - Hunt's 100% Natural Stewed Tomatoes
    14.5 oz can -Hy-top Diced tomatoes Italian style with Basil. Garlic and Oregano
    14.5 oz can - Libby's 100% Pure Pumpkin
    1 cup - fresh spinach
    1 TBS - Italian Seasoning
    1 - Large Onion Chopped
    1 - Large Green Bell Pepper Chopped
    10 - cloves of garlic minced
    2 tsp - Tone's Spicy Spaghetti Seasoning
    Salt and Pepper to taste

Directions

1.)Brown Turkey meat and rinse under warm water to remove excess fat.
2.) Return to pan and add TVP, onion, bell pepper, garlic and Tone's - cook until onion is translucent (salt and pepper if wanted also)
3.)While meat is cooking - mix Ricotta, 1 cup of mozzerella, egg. spinach (chpped) and Italian Seasoning in a medium mixing bowl. - set aside
4.)Add to cooked meat all tomatoes and pumpkin, stir to mix.
5.) In a lasagna pan put about 1/4 -1/2 cup of meat mixture on bottom.
6.) place 3 noodles on top of sauce,
7.)cover noodles in 1/2 of cheese mixture
8.) Cover cheese mixture with 1/2 of meat mixture
9.) Repeat steps 6-8
10.) sprinkle remaining cup of Mozzarella cheese on top.
Cover with foil and bake in preheated 400 degree over for 45 minutes. Uncover and continue baking for 15 minutes or until cheese is lightly browned and bubbly.

Makes 8 equal servings.
