Introduction

Ingredients

    1 lb extra lean ground beef
    1/2 onion diced
    1 can kidney beans, drained and rinsed
    1 cup prepared quinoa
    1 cup salsa
    1 cup sharp cheddar cheese

Tips

Heats well in microwave which is why I call it a lunch dish.


Directions

brown ground beef and onion in large saute pan, after meat is cooked, add kidney beans, quinoa, and salsa to pan and stir through. Season with salt & pepper to taste. Prior to serving add a scant amount of cheese on top.

Serving Size: makes approx 6, 1 & 1/2 cup servings
