Introductionlentils made with apple juice and ricotta lentils made with apple juice and ricotta
125g puy / green lentils
1 tbsp olive oil
1 red onion (chopped)
1 garlic clove (chopped)
1/2 tsp dried thyme or 2 sprigs fresh (crushed)
1/2 tsp coriander seeds
1/2 tsp mustard seeds
125ml unsweetened apple juice
30g ricotta cheese
2) Meanwhile, place the olive oil in a frying pan and fry the onions, garlic, thyme and seeds, stirring frequently, for 10 minutes or until the onions are soft and golden.
3) Drain the lentils and add them to the onion mixture. Add the apple juice and bring to the boil. cook until reduced to about 4 tablespoons. Stir in the ricotta, and heat through.
