Stuffed Zucchini

Ingredients

    6 large zucchini
    1/2 cup dry lentils
    1 Large egg
    1/2 roasted red peppers, diced
    3/4 cup feta cheese, crumbled
    1 shallot, minced
    1 garlic clove, minced
    Minced flat leaf parsley, to taste
    salt
    pepper

Directions

Cook lentils until tender, set aside.

Cut zucchini in half, and carefully scoop out the insides leaving the halves hollow. Chop up the insides roughly, then add to a large mixing bowl. Add all ingredients except for feta, and mix thoroughly. Add feta, and fold in gently. Spoon mixture into hollow zucchini halves, sprinkle with shredded, hard cheese of your choice if desired. Bake for 60 min, let rest for about 10, then dig in!
