IntroductionHigher protein for meatless Mondays. This is my first experiment with making lentil burgers of any kind. Higher protein for meatless Mondays. This is my first experiment with making lentil burgers of any kind.
* 1Can black beans, drained & rinsed 400 gram(s)
* 150 grams dry Lentils, Not red (or use 1 can)
* 1 Onion, dice finely
* 1 Garlic cloves, minced
* 1 Jalapeno Pepper, diced
* 2 tsp Chili powder
* 8 tsp. Salt
*1 tsp freshly ground black Pepper, black
* 2 large eggs
* 1/2 Yellow Pepper, diced
* 1/2 cup of breadcrumbs of choice
* Lean bacon cubes, 150 gram(s) (optional)
* 1/4 cup lite shredded tangy cheese of choice
*1/2 cup flour for dredging.
Serve on a whole grain bun with choice of topping. We like salsa & various veggies. Nice as an open-faced sandwich too.
Add lentils to pan and stir around for about 1 minute.
Add enough water to cover lentils. Cover with lid and cook for about 15 minutes. Note: directions on packages can vary so read the info on yours)
Check lentils to see if they are soft, beanlike texture and that most of the water is cooked off. Turn off heat and allow to cool. This makes them easier to work with later.
In a food processor, add beans, lentils, onions, pepper, jalapeno, garlic cloves, eggs, and seasonings.
Blitz until everything is a nice creamy consistency. It is ok to have some chunks or whole lentils as it will only add to the texture.
Add breadcrumbs to mixture to thicken & bind.
On a big plate, season flour with salt and pepper.
Shape globs of mixture into a burger shape and roll in dredge in flour.
In a sprayed frying pan, cook each burger on both sides (about 5-8 minutes) Be careful when flipping.
