Egg Lo Mein

Ingredients

    2 tsp olive oil
    4 medium eggs, beaten
    1 large red bell pepper thinly sliced
    1/2 cup onions
    1/2 cup shredded carrots
    1 cup celery
    tsp fresh ginger, grated
    1 large clove garlic, finely chopped
    2 TBSP chinese brown sauce
    1/2 tsp toasted sesame oil

Directions

Directions
In a large skillet or wok, heat 1 tsp oil over high heat. Add the eggs and scramble until firm. Transfer to a plate. Add the remaining oil, and heat until smoking. Add the veggies and stir-fry for 2 minutes. Add the ginger and garlic and stir-fry for 1 minute more.
In a small bowl, stir together the sauces .
Toss everything together.

Serving Size: Makes 2 servings
