Pineapple Chicken Stir-Fry

Ingredients

    1 lb chicken, cut into 1/2-1 in pieces
    2 tbsp cornstarch, divided
    1/3 cup + 1 tbsp soy sauce, divided
    2 cups broccoli florets, chopped
    3/4 cup red bell pepper chunks
    1 small carrot, sliced thinly
    20 oz can pineapple chunks
    1/3 cup reserved pineapple juice
    1/2 tsp crushed red pepper
    1/2 tsp garlic powder
    1/3 tsp ground ginger
    2 tbsp canola oil

Directions

1. Combine 1/3 cup soy sauce, reserved pineapple juice, 1 tbsp cornstarch, garlic powder, and crushed red pepper. Set aside.
2. Toss chicken with remaining cornstarch and soy sauce.
3. Heat oil in large non-stick skillet over med-high heat. Add chicken. Cook 4-5 minutes, until slightly browned. Add vegetables and ginger. Stir-fry 4-5 minutes, until slightly tender. Add soy sauce mixture. Cook until boiling and thick. Add pineapple chunks and stir until heated through.
4. Serve over rice.
