Vegetable Soup w/Beef

Introduction

This is a real comfort on those cold days. It has your need vegetables and protein. I use 80/20 Ground Chuck, but 93% Lean Beef or Turkey could be used as well. This is a real comfort on those cold days. It has your need vegetables and protein. I use 80/20 Ground Chuck, but 93% Lean Beef or Turkey could be used as well.
Number of Servings: 3

Ingredients

    Vegetable Medley 1- 14.5 oz can.
    Diced Tomatoes 1- 14.5 oz can
    Tomato Sauce 1- 8oz can
    Ground Chuck- 4oz (which is 1/4 of a lb)

    Brown & Drain ground chuck.
    In saucepan, mix diced tomatoes, tomato sauce & vegetables. Bring to a boil, then cut heat to a simmer. Add in ground chuck. Soup is ready to eat after a 15 min. simmer.

    Enjoy with crackers or cornbread, reduced fat of course.




Directions

Make 3.5 servings.

Serving = 1 cup
