Mushroom Mini Tarts

Ingredients

    1 package Pidy pastry shells
    4 oz cremini mushrooms
    1 green onion, white & green parts, chopped
    1 tsp olive oil
    1 tsp fresh thyme
    1/4 cup beef stock (can sub veggie stock)
    fresh chives (about 4-5 sprigs), chopped
    1 Tbsp fat free sour cream
    salt & pepper to taste

Directions

Slice mushrooms & green onion. Saute in olive until tender. Sprinkle with salt & pepper. Add beef stock, scrape brown bits off bottom of pan. Cook until most of stock is absorbed. Remove from heat, let cool for ~5 minutes.

Scrape mushroom mixture into small food processor. Add thyme and chives. Pulse to combine. Add sour cream. Pulse to combine again.

Warm pastry shells according to package instructions (350 for 6 minutes). Remove from oven, fill with mushroom filling. Place filled shells back into the oven for about 5 minutes, to warm through.

Serve warm.

Serving Size: Makes 12 mini tarts - 4 servings (3 per serving)
