Introduction

Saw this on Dr Oz - five minute muffin mixed in coffee mug

Number of Servings: 1

Ingredients

    1 tsp coconut oil
    1/4 cup ground flax seed
    1 tsp cinnamin
    1 tsp baking powder
    1 package stevia
    1 egg

    Mix all ingredients in a mug and put in microwave for 55 seconds.
    Slice and eat. If too dry spread a little butter

Directions

Cook in microwave 55 seconds

Serving Size: makes 1 muffin

  • To make this for my kids, I omit the cinnamon and add a Tablespoon of Cacao powder and just a few semi-sweet chocolate chips. My son likes coconut so I will put just a pinch of shredded or dried coconut in if I have it in the house. I have also tried this with a couple of dried chopped cherries. - 2/20/13
