A hearty bean mixture to serve with Tostitos Multi Grain Scoops for a starter or snack. Or use a spoonful as an unusual topping for your green salad. A hearty bean mixture to serve with Tostitos Multi Grain Scoops for a starter or snack. Or use a spoonful as an unusual topping for your green salad.
Number of Servings: 20

Ingredients

    1 16oz can Bush's Black Beans
    1 16oz can Bush's White Beans
    1 16oz can Bush's Red Beans
    1 11oz can Green Giant White Shoepeg Corn
    1 16 oz jar Muir Glen Garlic Cilantro Salsa
    1/4 cup chopped fresh green onions
    1/4 cup chopped fresh green bell pepper
    1/4 cup granulated sugar (or sugar substitute)
    1/4 cup apple cider vinegar
    1/4 cup water

Tips

Serve the "caviar" with Whole Grain Tostitos Scoops or Top a fresh green salad with a scoop of the mixture. Will keep in the refrigerator for several days.


Directions

Pour water into a small glass bowl and add sugar. Place in microwave to dissolve sugar. Remove and add Vinegar to the mixture. Set aside.
Rinse and drain the 3 cans of beans and pour into a large mixing bowl. Drain the shoepeg corn and add to the beans along with the green pepper and onion.
Pour the jar of salsa and the vinegar/sugar over all the ingredients. Mix well. Cover and refrigerate.

Serving Size: makes about 20 half cup servings
