Introduction

Number of Servings: 6

Ingredients

    3.5 cup Water
    2 cups Campbell's Beef Broth or homemade
    2.5 cup chick Peas
    1.5 cup Onions chopped
    3 medium Carrots
    .33 Tbsp. Basil
    (.25 Pepper, black) opt
    .5 lb. Beef, eye of round

    3.5 Stewed Tomatoes, with herbs
    1 satchet Beef Oxo
    1 tsp sea Salt
    1.5 Corn Starch

Tips

This recipe was originally for the slow cooker. Make sure the roast beef is cut into very small pieces. Also called for 1 lb of beef the calorie count jumps dramatically. But so does the protein.


Directions

Combine first 8 ingredients. Bring to very low boil and then turn down and simmer for 1 hour. Strain tomatoes and add. Stir reserved juice into cornstarch and stir until smooth. Stir some heated stew liquid into this mix. Bring pot to low boil and add the cornstarch thickener. Stir well, simmer for another hour or longer. The longer the better. Voila, deelish.

Serving Size: 11.5 one cup servings or six 1.75 cup servigs
