Ingredients

    3 cups mixed greens
    1/4 avocado, mashed
    1/4 cup salsa
    1/2 cup cooked brown rice
    2 oz seitan sliced thin
    1/4-1/2 tsp cumin
    canola spray
    1-2 cups vegetables--any variety
    chopped scallions

Directions

Prep the vegetables: Preheat oven to 375 degrees. Spray a baking sheet with nonstick cooking spray. Spray vegetables with oil spray and sprinkle with salt (optional). Roast 15 minutes. Remove from the oven.

While the vegetables are cooking, heat a small saute pan, then add the cumin and seitan. Saute, stirring often, until seitan has some color and is heated through.

Mix the avocado and salsa together and set aside.

Grab your largest salad bowl and add three hearty handfuls of greens. Layer on the precooked brown rice, then the seitan, veggies, and guacamole. Sprinkle the scallions on top.

Serve with additional salsa.

Perfect comfort food for those who like some spice in their comfort.
