Broccoli Cauliflower Salad

Introduction

Based on a salad from the deli counter at the grocery store. Based on a salad from the deli counter at the grocery store.
Number of Servings: 6

Ingredients

    1/2 cup olive oil mayo
    1/2 cup 2% greek yogurt - plain
    1 rounded tbsp whole grain dijon mustard
    1 tbsp honey
    red wine or cider vinegar to taste
    12 oz broccoli florets, chopped
    12 oz cauliflower florets, chopped
    1/2 cup sunflower seeds, hulled, raw, and unsalted
    1/2 cup dried cranberries
    2 oz crumbled feta

Directions

In a large bowl, whisk together mayo, yogurt, mustard, and honey. Whisk in enough vinegar to make the mixture your desired texture and taste.

Fold in the broccoli, cauliflower, cranberries and feta, until coated. Sprinkle with sunflower seeds.

Serving Size: Makes 6 Servings
