5 medium eggs
4 pieces of low sodium turkey bacon
4 pieces of light wheat bread toasted
1/3 cup Monterrey jack
2/3 cup reduced fat cheddar
1 cup frozen spinach
Tips
4 large eggs can be substituted for 5 medium
Directions
fry turkey bacon, toast 4 pieces light wheat bread, and scramble 5 medium eggs. lay toast at bottom of square casserole dish, pour eggs over toast, distribute 1 cup frozen spinach, break turkey bacon into small pieces and distribute. top with 1/3 cup Monterrey jack & 2/3 cup reduced fat cheddar. bake in 400 degree oven 20 mins
